Finally, I has bananas :D

It is hard to keep bananas in this house, they are gone before you blink!! I managed to sneak some into my baking cupboard, which is where I store all my good snacks and no one ever looks ha ha ha ha So today I finally was able to make the http://www.deliciouslyella.com Banana Pancakes.

As a baking type of person, if you tell me that a pancake recipe has no eggs, milk, flour, sugar, any of the stuff we would normally associate with pancakes I would probably laugh in our face. But these WORK.

Basically, you make a ‘flour’ out of almonds and oats in the food processor, mix in water, bananas, blueberries and a couple of other things, and cook them just like you would with pancakes. The recipe says it makes 4 large pancakes, mine made 5. It doesn’t have how many servings these pancakes feed, but I’m going to go on how I felt after one of them: about 4 people could eat these. I was SO FULL, so so very full after just one.

This is what they looked like:

IMG_5721

And they were REALLY REALLY good. Much like everything else I have made from her blog. Not surprised…. 😀

At the moment I’m following a bit of a food plan, so I wont be making any more of the breakfasts just for now, so I’ll be moving on to the juices and smoothies from the app next 🙂

Blueberry and Banana Muffins

You might have noticed I’ve been loving all of the recipes so far. They are so GOOD!!!!! This time I made the Blueberry, Banana and Raisin Muffins. You might also notice that I leave raisins out of everything that says it has raisins it it. While they do have a place in fruit toast or Christmas cake, they just don’t work for me with berries, they kind of take away from them IMO so yeah….

So this is what I made:

IMG_5508

find the recipe at http://www.deliciouslyella.com

Now mine didn’t look particularly beautiful, and a couple even got burnt. I think that the two cups of blueberries made my mixture too moist and they refused to cook, they took like an hour and a half, so I think in future Ill make smaller ones so that they cook faster. I would maybe suggest to try less blueberries, but I love blueberries so I wont be doing that 😀 I’d prefer a bit crunch on the outside with the stacks of blueberry flavour these had over less berries any day!!

The ‘flour’ that you make from oats and almonds is really good, it said to add ground flax but I couldn’t get any when I wanted to make them, so I used more oats and almonds to make up the quantity. I will definitely use this flour again for muffins, once they were cooked it definitely formed a muffin consistency and the flavour was so good!!!

I keep going to make the banana pancakes that are next on my ‘to make’ list, but someone keeps stealing my ripe ones and eating them before I get the chance!! Hopefully I can get some and hide them, I want my pancakes!!!!!

The time has come… :)

In two sleeps I will teach my first proper Pilates class. I have taught small groups and one on one, but they were with people I know, this is a whole different thing now. I’m so nervous!!!! I’m hoping it will be like when I used to sing in high school: Scared to death in a small group, but in front of a whole hall full of people I didn’t really know it turned out ok and got a bit easier. So I’m super excited, because I’ve wanted it for so long, but also super jittery ha ha ha ha ha Wish me luck!!!!!

So birthday week is well and truly over 😀 Back to the juice tomorrow, with my veggie foods thrown in. With exams coming up there is no way I can just do juice right now, my brain needs all the help it can get. So my little boys birthday was fantastic, I couldn’t have been happier, when he came up to me to tell me what a great time he was having, that is the best part 🙂 I’m still smiling remembering that 😀

This is my little guy with his cake that I made, he is a huge Angry Birds fan 😀

IMG_5606

We had an awesome time, was so nice to have a happy break from everything Ive been doing lately 😀

IMG_5681

Cant believe he used to be a little bubba, he still sleeps like that too!! Bet he does when hes 15 too ha ha ha ha ha

So now, its all systems go for studying, boooooo. I have two exams and one assignment due all in the next two weeks, its been a super hard session, and I’ll be happy to be at the end of this one. I’ll be halfway through, only two and half more years to go, woo-hoo!!!!!! Meow has been helping me 😀

IMG_5690

I’ll let her do the exam, she probably reads more than I do anyway 🙂

While my sister was here she threw together a super yum dinner (bit of a quick change of subject!!!) and told me the ingredients, gave it a go tonight with a couple of small changes, and its super yum, here is the recipe:

1 carrot, grated

1 red capsicum, finely chopped

1 red onion

8 button mushrooms

1 tin tomatoes

1 tin red kidney beans

1 tin low fat refried beans

1 tin corn kernals

2 red chillies (I have jar of organic red chillies that I dehydrated myself and are super strong, seeds still in, gives it a really good kick, you might want to adjust the quantity according to the chillies you use)

1-2 tablespoons ground cumin seeds

2 tsp smoked paprika

3 tablespoons tomato paste

1 sachet taco seasoning (you can make your own, theres heaps on Google, but I used the shop bought one for this)

So pretty much you cook up the onion and mushrooms, add the carrots and capsicum when the onion is soft, add spices, then all of the canned stuff and give it a good stir. Season if you want, and simmer until it looks like this:

IMG_5788

It’s so so easy, and super yum!!! Makes a GINORMOUS pot of it too, dinner for ages and good to freeze. This is how I have it:

IMG_5789

On a tortilla with lettuce, baby spinach, tomato, soy mayo, avocado and brown rice and quinoa, and a teensy spoonful of cottage cheese, I so love cheese with my meals, am cutting it right out, slowly, but I’m getting there. So without all of my extras, the Mexican stuff is 100% vegan, how I have it is vegetarian, cause of the cheese obviously. I swear I will make my own cashew cheese one day, I will 😀

And there you have it 😀

Oh, and one more thing: I finally got my drink bottle. Might not be a huge announcement, but I was pretty excited 😀 You all know how I love my lemon water, but it does get to be a pain in the bottom sometimes when I’m out, you cant just squeeze a lemon into random water bottles, so this is what my new drink bottle does, winning!! It’s called a Citrus Zinger, and I seriously waited 4 weeks for it to come from overseas, but its so cool and totally worth it 😀 It has a citrus juicer in the bottom, so you just flip it over, squeeze your lemon, then flip it back and fill it up. Genius. You can store a lemon for a second refill too, also genius!!!

IMG_5704

Lovely 😀 I so love my gadgets 😀

Anyhow, it is back to the study for me, thanks for reading as always!!!

Day six reboot/day one juice only = success :D

Yup you read it right, success 😀 Yay I didn’t even cave in to garlic bread ha ha ha ha ha

Pretty happy with todays outcome really, I’ve had 4 out of 5 juices so far, with one saved for when I start studying in a minute, had my coconut water, my peppermint tea, although I disguised that as coffee, it didn’t work…..

IMG_5491

And thats it 🙂 Had a yum juice this afternoon, pineapple, lime, lemon, ginger and celery, that was good 🙂 Had one carrot, ginger and apple juice and two of the green lemonade juices that I tried the other day, so far so good!

What I found really interesting was that I am not ‘hungry’. Not food hungry anyway. It’s a totally different feeling…

I watched a documentary the other night called Superjuice Me. Its like Fat, Sick and Nearly Dead in that it promotes juice as a way to get loads of nutrients into the body, but a bit different in that it takes 8 individuals with LOADS of diseases between them, and sees what difference a 28 day juice cleanse makes to their lives. And its AMAZING. I totally recommend giving it a watch, the link is here:

http://www.superjuiceme.com/28-day-juice-plan/

What really made sense from the documentary was this: Remember every time you have ever gone for like, Chinese food or something, and you stuff yourself stupid, then you get home and you are all kinds of hungry and could eat that whole entire thing over? Well if you think of your body as a whole bunch of cells needing nutrients to keep everything going and running properly, and then when they have enough power from food to run smoothly they switch off your hungry signals, well, your Chinese dinner doesnt do this. Instead, you eat all the food, you don’t take in any nutrients, and your cells say “well that was all very well and nice, but I’m still hungry for nutrients so give me more food!! I will make you eat until I have my nutrients!!!!” And so you are hungry again, despite your digestive system trying to work its way through the four plates from the buffet you just scarfed down.

So today I have had four juices. And I’m not hungry AT ALL. I have an ’empty’ feeling, but its not a real hunger that I would normally get, telling me to eat crackers and coffees and bread and salty food, its just not there today. I made dinner for my little boy, which looked and smelt really good, but I didn’t have the urge to eat anything myself, I just didn’t get the ‘it’s dinner time’ signals I usually get. I think my cells have said “good work, we are full now, you did good” 😀

And that is a happy thing 🙂 Yay for day one juicing working out 🙂

xx

Day five reboot: Its time to get serious :D

So it’s my last official ‘food day’ today, tomorrow the juicing begins. And it couldn’t be worse weather for it ha ha ha ha 11 degrees and currently raining, nothing says hot soup and toast more than a night like this.

But it will be ok. The fridge and fruit bowls are overflowing, the couple of ‘off the menu’ foods I have eaten this week were enough to remind me how rubbish I’ve been feeling and how much I need to do this right now.

I also know that this page and my fb don’t need to be inundated with a billion photos of jars of juice every day ha ha ha ha So I won’t be posting each day, there really won’t be much to say, but I promise I will post an update at least one a week 🙂

So, I better get back to my study, biochemistry does not study itself and magically appear in my brain on exam day, unfortunately 🙂

See you tomorrow xx

*this right here is about to be my most best friend and important thing in my whole kitchen 😀 again 😀

Day four juice fast: Oil and what it can do for you

Day four has been hard, it always is. So I had a soy chai this morning which kept me super full and back on track, as well as some tomatoes with pepper and pink salt, some fruit, and some salad veggies for dinner. That fixed that, and will be back to juice tomorrow 🙂

Anyhow, what I want to talk about today is oil. Not the greasy saturated stuff that you cook your chips in, but the natural, plant and nut derived stuff that can be totally beneficial for your health and you body.

There are huge debates over the use of oils in the diet, but one thing is for sure, you need these oils to live. As you know (or may not know) I am studying nutrition at uni, so here is a brief rundown (in my very special Daisy language) of what I know so far:

You have 2 types of cholesterol in your system, the HDL and the LDL. Not all fats are bad,  your system is made up of them, membrane walls, your brain, and even hormones all get help from cholesterol from good fats.

The LDL cholesterol is the type that builds up in your arteries, and can cause health risks and issues like strokes, heart attacks, and are provided to you by excess of saturated animal fats from meat, dairy and eggs, and the HDL are your ‘good’ cholesterols, which come from fish and plant oils, your body even produces this stuff itself in the liver to help you, they actually sweep through your system, collecting the bad cholesterol and flushing it out for you. It can be easy to have an imbalance, even if you eat a fantastic diet, as cholesterol levels can be hereditary, and is important to get these things checked.

Basically the build up in your system occurs when you are not taking in enough of the good oils, and are consuming too many of the bad ones. Examples of ‘good’ oils are the omegas found in fish, nuts, seeds and plants, things like avocado and almonds and walnuts. Although these are good oils, they should still be eaten in moderation, like anything really, as they do have a high calorie count (not great if you are watching your weight). Half an average avocado can be up to 140-150 calories, and I definitely know how easy it is to eat a whole one of those!! That being said, they are also a filling snack with many nutrients and vitamins, and obviously a better choice to have one of those beautiful green pear shaped fruits than a bag of chips 😀

So I’ll tell you how I use oils the most: I cleanse and moisturise my skin with it, I oil-pull, and I make raw, vegan chocolate. I occasionally use it as a hair serum too.

So my whole entire skin regime is in a bottle of oil. I have no cleansers, toners, moisturisers, eye creams, hand creams, I own none of that. I used to work in a pharmacy where I got all of my Dior skin care stuff for free, I had BUCKETS of skin care stuff, with a lotion or potion for EVERYTHING. And now all I have is my $9 bottle of avocado oil in the upstairs bathroom, and my $5 bottle of macadamia oil in the downstairs one 😀

I massage in about a 50c coin size of oil onto my face, then I rinse a face washer under a hot tap, squeeze it out, and rest it on my face for about a minute, then wipe off the oil. Then I rinse it again, rest it on my face again, and wipe it off. Thats my cleansing done. Then I get about a 5c coin size drop of oil, rub it in my hands, and pat it all over my face and neck. Thats my moisturising done. And that is all I need.

My skin has never been better in my entire life, my pores are smaller and not as dark, I don’t get the big pimples anymore, I’m not as shiny or oily (how odd you might say, but have a think about this: oil and water don’t mix. You cook something oily and pour water in the frypan to soak and what do you see? A gross big oily residue sitting on top when you eventually get around to washing it. Same goes for skin. You wash your face with water and your natural skin oils sit on the top and protect everything underneath it, so effectively NOT washing your face and leaving dirt and build up on your face. So what do you do? You add a cleanser, full of chemicals and detergents and junk to dissolve the oil and wash the dirt away. You know what your skin does? It has a mini freak out and says “OH MY GOD, WHERE HAS MY OIL GONE??” and then goes and produces more of the same of what you just washed away, and then some. Particularly if you are an oily skin type and you wash your face often. Ever wondered why you might have oily skin? Because you may be washing away the oil your skin wants, so it goes into over-producing mode and gives you a whole bunch more because you NEED it. With oil cleansing, you are giving your skin oil, oil dissolves in oil giving it a great clean, then you are giving it a bit back. Your skin stops producing as much, and you actually look and feel less oily. TRUE STORY. If you don’t believe me, try it for 2 weeks, and tell me I’m wrong.)

IMG_4009I’d like to know when in the history of EVER did my skin ever look better or clearer than this? I think the answer is that it hasnt, and I was sick the day I took this photo too ha ha ha ha ha 😀

The second (and more weirder thing) I do with oil is oil pulling. If you haven’t heard of this, read here: http://www.thewellnesswarrior.com.au/2012/04/oil-pulling-my-new-morning-ritual/

I actually started it because some research said it may help to clear up sinus issues. For me it didn’t, but I got hooked on it after I saw how white my teeth got!!!! Here is a photo of my teeth as I sit here at my computer, I have not enhanced it in any way, and yes, I am aware they need work but whatever, they are WHITE.

IMG_4315

Not even my old peroxide teeth whitening stuff got that result….. In the article I posted it says to rinse your toothbrush in hydrogen peroxide and stuff after you brush, I’ve never done that, just a really good rinse under hot water and air dried it and it is good to go. I have also noticed a lot less wisdom tooth infections and pain since I started too… worth a shot if any of you out there get that!!

The last thing on my DEFINITELY HAVE TO TRY THIS WITH OIL list is the raw vegan chocolate. Now, loads of people are on the ‘coconut oil is the greatest invention ever made and it will save the entire planet from everything ever’ bandwagon, but here is my opinion: It is an oil. It is a medium chain fatty acid, which is a heck of a lot better for you than a long chain fatty acids which are your saturated fats. Shorter chain fatty acids are your plant based oils are are good for your health. So coconut oil, while it is saturated, is medium chain, so right there in the middle of good and bad, its digested more readily by the body and doesn’t reach your gall bladder, which is great if you have issues with that. Where all the crazy hype comes in I’m not so sure about that, but I know for making recipes and having something yum, I know that I would prefer to put something in like coconut oil.

So, chocolates. I have posted this before, but I’m going to do it again (and probably again, and again, its that good). It is my go-to recipe that I use all of the time when I want chocolate. I’m not a big sweet tooth, I would prefer a pizza any day over chocolate, but when you get an urge you gotta have it 😀 This recipe takes less than 5 minutes to make, is super simple, you can add ingredients to it like puffed rice, dried cranberries and almonds (my favourite stuff to put in!!) and you only need a few small pieces to curb that craving 😀 http://crueltyfreerecipes.com/2013/07/01/homemade-dark-chocolate/

This is a photo of the ones I make all of the time:

IMG_0984

So there are my three favourite things about oil. Give them a go, you will not regret it!!!!!!!!!!!!

Day Two of my juice fast :)

So yesterday I posted a quick bit about what I’m doing, tonight I might get to write a bit more. If you have a three year old and a hectic life, you will understand that time to myself to write a blog can sometimes be next to impossible, so thanks to you guys who read what I write and stay patient if I don’t blog when I say I’m going to 🙂

Anyhow, my ‘food’ yesterday consisted of this:

IMG_4295

IMG_4297

Basically, its a small jar (approx 500ml) of carrot, orange, apple, carrot and celery juice, and two big jars (approx 845mL) one is strawberry, mint, cucumber and celery, and the other is kale, spinach, cucumber, celery, green apple and carrot. I also had a one litre bottle of soda streamed water with lime, and 4 jars of lemon water. For dinner I also ate corn soup.

I have decided that on my juice fast, if I get hungry (it does wear off after a while, but I find myself having a massive fail in the first few days every time, I’m going to try and not let that happen this time!!) that I’m going to add some fruits and vegetables into my diet, just to CHEW something, I think that is a huge thing for me, the chewing of the food 🙂 So chunky vegetable soups, salads, fruits, dehydrated fruits and veggies, I’m going to include these when needed. Might be a couple a day, might not be any for a few days, will wait and see. Like today for instance I had slices of tomato with pink Himalayan salt and ground pepper on them, tasted super yum and totally hit the spot 😀

Pretty much this will be the go most days, so rather than post photos of juice each day (thats not very exciting!!) I’m going to try and post about different things that interest me about a raw vegan/vegetarian lifestyle, and hopefully you too. Tomorrows post is about KOMBUCHA, am super excited, my friend is sending me a SCOBY so I can make my own, will tell you all about it tomorrow 😀
